We’ve got a scrumptious Protein Pancakes recipe for you — perfect for breakfast, a post workout snack or to enjoy on pancake day! This recipe has a massive 30g of protein per portion, helping you to stay fuller for longer. Serve with blueberries and sugar-free syrup for a healthier alternative to honey or maple syrup.
Step 1 In a large bowl add the eggs, protein powder, yogurt and baking powder and mix until combined.
Step 2 Next, heat a frying pan with the cooking spray. Once the pan is hot, pour in rounds of the batter, approximately 8cm wide. Try not to put the pancakes too close together as they will spread during cooking.
Cook the pancakes on one side for about 1-2 mins or until lots of tiny bubbles form and pop on the surface. Turn the pancakes over and cook for a further minute on the other side. Repeat until all the batter is used up.
Step 3 To serve, stack the pancakes on a plate and top with a scattering of blueberries and a drizzle of the sugar-free syrup!
